how can I update an extension without having to delete the old one and all the blocks.

Usually, you simply import the updated extension in the same way as you do for any extension. The extension should just update. You may need to adjust some of the blocks - these will be highlighted with a red outline.

Occasionally, the extension can be completely different (internally) - the developer will usually advise that the old extension needs to be uninstalled before adding the new one, in this case you will need to manage the blocks accordingly.
