If variable do. Switch properties

I am new to MIT app inventor and I like it very much.
However, it looks I am missing something important. Searched through samples, FAQ and I still don't get how to use a variable. There are some things what I don't understand:

  1. Design element "switch". If it is changed, it remains changed till application restart, despite it has two positions. How can I use it's position "on" and "off" ? I see only "Switch changed" block under blocks menu.
  2. I set variable = True. How can I create a conditional action like:
    if variable==True, do this; else ...
