How can I change the colour picker of the app inventor?
Which file/files I have to edit?

I don't know the answer to your question but be advised that the whole colour management of App Inventor is about to be changed (improved).

He just want to change the color picker in the designer tab in app inventor sources.

The ColorPicker panel is created in the the ColorChoicePropertyEditor.java file. So you would probably have to do your changes there.
