Hi, I want to edit the barometer. How can I say that it should take the data from my external sensor and not from my phone.

Then, you can go for Arduino, Bluetooth and Barometric Pressure Sensor (SPI)

OR... you can study appinventor-sources and modify Barometer Component, the way you want it to work.
