In the current project, the editor has few elements in the palette, in the blocks and in the instruction set for each element. The old projects are ok.

Can you post an image to show how it looks like? Where did you get your current project? There is an option in App Inventor to show only the components and blocks that are being used.
What if you try this. On screen1 go to BlocksToolkit and set it to all.
