Is there any way I can use texting with a dual sim phone, and choose which number to use?
It is my understanding you cannot choose which number to use. Texting probably uses the Android’s default value. The Texting component cannot be use to set the number you would like to use.

Hi, I have this problem, has anyone found a way to select the default SIM to send SMS? On Samsung smartphones it works, on Oppo, Xiaomi and others it doesn't, the messages application doesn't open.
