I'm sure it's easy to do but I can't find it.
I am sending data to a google sheet file with the time but I would like it to be 13:10 and not 01:10. is that possible ?

If you are doing it manually with text, no. 01:00 can be both 01:00 and 13:00.
However, with a clock, yes.
