if you serach a little in the forum, you'll find a huge quantity of similar topics.
The (many) reasons why this could happen are already listed in those threads (permissions, pairing, BLE vs Classic BT, many more....). Please have a look there, and if the problem persists, post both your app and ESP32 codes.
In the meanwhile download from the playstore the free app Serial Bluetooth Terminal, install it on your phone and verify if the ESP32 side is working fine: in this way at least you remove the 50% of uncertainty.
