How do I convert String to characters?

I have a variable with the current date like
"01/28/2021" is there any way to convert it into numbers or characters and subtract days? For example Date -1 = 01/27/2021

Pull in the Clock component from the Sensors drawer.

It has loads of blocks to do date math.
